I've have looked all over for this, and am probably just missing it.... Can
anyone tell me where to find a GP path for setting the default email
client....

I have a Domain Controller that is doing DHCP but we are going to be
taking it down.  Thus, I am tasked with getting DHCP, DNS, etc
configured on Server2.
Server 2 is a domain controller.  I used netsh to export the DHCP

was on *Security tab* set "**Authenticated users**" to "**Deny**".
After that it disappeared from GPO, it is there, but nowhere shown.
