To have the desktop of the remote computer span multiple monitors, type
Mstsc /span at a command prompt

Are you sure that it is not required for the server or host PC to be
Longhorn or VIsta?

It require the Remote Desktop Client version 6.0
and the /span parameter will work only if the monitors have same resolution
with aligned coordinates.
