We currently use SUS to keep our XP Prof clients up to date with patches

But the boss wants us to do the same with our Windows 2000 servers  -
obviously doing it on a test one first.

Does anyone else do this - or has anyone any recommendations?

Cheers

There is no technical reason this can't be done.  That
being said I alwayys like to be the one to reboot my
server that we I'm ready if it does not come back up.

Widnows servers are in their own OU in Active Directory.  Override the
windows update configuration on your domain and tell it to simply download
and notify when ready to install.  This way your servers don't reboot on
their own.
