Can I safely delete windows update directories in
$NtUninstall., $NtServicePackUninstall$, $ExchUninstall.
directories without affecting the operation of my server?
If the directories can not be deleted outright, what is a
safe way to delete them? I am trying to free up space on
my server.

Thanks
Emma

These folders are used only for uninstalling the related updates and
patches.  If you're sure you won't want to uninstall them, you can safely
delete the folders.  My preferred approach is to save them to a CD, just
in case something comes up.
