How to configure Exchange server for hosted service

Hi Folx;
Is there any documentation on how to setup exchange in a way that I can host
multiple domains. I am looking to get in to hosted exchange service
business, I see some busineses out there but can not find how it is possible
to do it. I know you have to do some work on the active directory and
exchange to set such structure where each company will have their own
exchagne server and no users from one company can/will access to data of
other users from different company.
If you could include step by step documentation on how to do all that, a
site, link etc, it would be greatly appreciated..
