How to setup Exchange Server 2003 for public Hosting

Will like to setup Exchange 2003 Enterprise for hosting. How can I go
about doing this?
I will like to host multiple public domains for provide email service.
One of the things that I will like to do is be able to share calendar
and address books but only on a per organization basis.
EX: group A cannot see the address book or calendar for company B.
