Multiple Exchange Servers - Single Forest

We are currently running Exchange 2003 in a forest with a parent and a child
domain.  Users in the parent domain (company.com) use the current Exchange
server and we would like a second server for the users in child.company.com.
The new users will have email addresses in the child.company.com namespace.
I've read and been told that you can't have multiple organizations in a
single forest.  I want to completely separate the two sets of users as far
as GAL and Public Folders are concerned.

What are my options for accomplishing this?
