I currently have 2 exchange 2000 servers running on the same domain. The
first one is running Enterprise and the second one is running standard ed. I
originally built the Enterprise one and then the standard one. I moved users
from the Enterprise to the standard. I want to add a third server on the
same domain. Is that possible? I would like to move all the users from the
first server to the third server and then shut the first server down to
rebuild it. Thanks for any help.

Yes, it's possible (and many more servers after the 3rd one... )

Keep in mind that removing the first server in the organization has a impact
on your environment. Becuase the first server holds a couple of important
roles they have to be transferred to another server.
Depending on your environment a list is shown with important roles
- Offline address book folder and generation
- Recipient update service
- Connectors
- Public fodlers
- Routing group master
- SRS
