I think the simplest solution is to turn on POP3 access for the mailbox.
Have you tried this?
There are obviously many POP3 clients for Linux and MAC

Thanks for the prompt reply.
Will ask the question to our Exchange admin - initially tried to
provide IMAP access but it seems this could not be done in a read-only
fashion.
With POP3:
1) Will the emails in the mailbox be safe (i.e. they will not be
deleted?)
2) I understand that POP3 downloads the emails on the client - is this
correct? If so, will a copy of the email always be left on the
mailbox?

Actually you may use POP3 or IMAP4. IMAP will give you access to more than
just the inbox, if you have subfolders.
With both you may select to leave a copy of messages on the server.

Our IT guys tried to connect to this mailbox but the only way they
assure me they can connect was by using the credentials of the SELF
user (the user that owns the mailbox). This user allows to delete
emails in this mailbox and one of the key requirements was to provide
IMAP access with read-only rights.
Perhaps we are missing some key points? Also, could this be done with
OWA? Our IT guys tried to subscribe to this mailbox and they could not
make it work with OWA. With an Outlook client it's easy because you
simply open 'Other User's Folder' and if you have permissions then you
can access this mailbox - the problem is providing access to Linux and
Mac users.
