Disable network card, open Outlook, create a new PST, drag and drop from OST
to PST.

Erm.
On the client, disable the network card.
Start Outlook.
File New, personal folder. Then go into each folder of the OST and drag and
drop the contents to the same named folder in the PST. Then close the PST
then close Outlook.
